Have you ever had pitahaya, otherwise known as dragon fruit?  Ever had a dragon fruit bowl?  I have not tried either, so I am looking forward to learning how to make this delicious and healthy bowl that you can eat at any time of the day.  Miss Montana USA 2020, Merissa Underwood, shows us how it is done.  Let’s take a look…

 

 

Miss Montana, Activist, Environmentalist, and Proud Vegan

Merissa Underwood is a vegan of six years who recently represented Montana at the Miss USA 2020 pageant. She works tirelessly to promote veganism and sustainability not only to the people of Montana but to the world. You may have seen her face on a change.org petition as she received a massive amount of backlash for her stance against animal agriculture, which only added fuel to her fire.

Merissa was interviewed by our own Jane Velez-Mitchell on #LIVEtalk about how she was bullied for being vegan after winning the crown as Miss Montana. That personal, ethical choice rubbed some people in Montana the wrong way.  But, she also earned the respect of a lot of people for showing incredible grace under pressure! Let’s Take A Closer Look At The Dragon Fruit Bowl Merissa Made!

Dragon fruit, also known as pitahaya, is a tropical fruit known for its vibrant red skin and sweet, seed-filled pulp. Its interesting look and rumors of superfood powers have made it popular among food lovers and health-conscious people.  It is an antioxidant, which makes it super popular among people who prefer plants that pack a powerful nutritious value.  The dragon fruit bowl Merissa made would be perfect for breakfast, with the blended smoothie combined with granola and topped with vegan whipped cream.  Oh my!  Sounds like perfection to me.  Who doesn’t like a sweet breakfast that also packs a ton of nutrition!  let’s do this…

Dragon Fruit Bowl

Course Breakfast

Ingredients
  

  • 1 cup pitahaya (dragon fruit)
  • 1/2 cup blueberries
  • Protein powder of choice
  • 2 cups plant milk
  • 1 Tablespoon of powdered peanut butter
  • A spoonful of chia seeds
  • plant-based granola of choice

Instructions
 

  • Blend on high everything but the granola
  • Add granola to bowl
  • Pour smoothie into bowl
  • Add chopped bananas
  • Spoonful of hemp hearts
  • Top with coconut whipping cream!
