How Can Mindful Eating Change Your Life?

This mindful and simple UN-Chicken salad will leave you feeling full, comforted, and knowing no harm was caused for you to be fed a healthy and delicious meal!  This is a summertime favorite for our guest Chef, Sarah Segal who uses Sweet Earth Foods mindful plant-based Chik’n Strips for her summer salad.

 

 

Mindful eating in combination with living a vegan lifestyle is the best way to live.  Knowing that everything I put in my mouth is cruelty-free, and animal-free makes my time here on this earth filled with much more compassion, love, and empathy towards all living creatures on this earth.  Going vegan was the best decision I have made in my life to date.  I feel so much better physically and mentally since going vegan, and it has everything to do with being more mindful of all the life around me and all the suffering that continues to go on in the world, which we must continue to fight to end.  And an added bonus:  Being vegan is far healthier than a meat and dairy-filled diet. I feel much healthier since going vegan 9 years ago!  No doubt!

Sarah Segal lives her life as an ethical vegan and animal rights activist, mindfully feeding herself healthy plant-based meals while she remains very aware of the suffering that continues to happen all around the world in animal agriculture and beyond, hence why she does what she can as an activist to help put a stop to it. She is the founder and chief caregiver of Beach Pets L.A. , a private dog walking and overnight pet sitting service. She lives in Los Angles with her vegan beagle companion, Boomer Jr.

Mindful Chic’n Salad

Course Salad
Cuisine American

Ingredients
  

  • 8 oz of plant-based chic’n cooked
  • 2 cups chopped celery
  • 1 cup chopped red onion
  • 1 cup vegan mayo
  • 1/2 fresh lemon
  • 1 cup seedless grapes*optional
  • Fresh ground black pepper

Instructions
 

  • Chop up the chic’n
  • Mix all ingredients together in big bowl.
  • Served chilled over bed of lettuce or on sandwich bread. Enjoy!

    Used to eat meat, but now vegetarian, and this recipe is absolutely the most delicious chicken salad I’ve ever had! I’ve put it on bread, crackers and of course lettuce.

    (Only suggestion is, it would probably be good to specify in the directions to cook the chicken first. (I microwave mine) It says it on the package and also in your recipe (8 oz of plant-based chic’n COOKED) but you know how people are. They may think it’s already cooked and miss that step. Just a suggestion. You nailed it with this one. I never run out of chicken salad in my fridge now!
