She holds a certification in plant-based nutrition from the Center for Nutrition Studies at eCornell. She is a lifestyle health coach and well-known plant-based food educator in Northern Colorado. She enjoys teaching nutrition and cooking for all ages. She also offers one-on-one consultations and private cooking classes.

A Unique Hummus Recipe Made Easy

A twist on the classic hummus recipe, making it both healthier and more colorful. Adding beta carotene-rich carrots and healing spices such as turmeric and ginger not only makes it gorgeous to look at but also good for our body. Enjoy it on whole-grain toast or with baked pita chips. You can also turn it into a hearty veggie wrap using some raw or roasted veggies as Sapna did!

Spicy Carrot Hummus 

A twist on the classic hummus recipe, making it both healthier and more colorful. Adding beta carotene rich carrots and healing spices such as turmeric and ginger not only makes it gorgeous to look at but also good for our body. Enjoy it on a whole grain toast or with baked pita chips. You can also turn it into a hearty veggie wrap using some raw or roasted veggies.  
Course Dips
Cuisine Mediterranean
Servings 2 cups

Ingredients
  

  • 2 cloves garlic minced (1 tsp)
  • ½ tsp ginger minced or 1/8 tsp ground ginger
  • 1 carrot about 1 cup diced
  • 15- ounce can garbanzo beans drained and rinsed
  • 2 tbsp tahini sesame seed butter
  • Âľ tsp cumin
  • 1/8 tsp turmeric
  • 1/8 - ÂĽ tsp cayenne pepper optional
  • ½ tsp salt to taste
  • 1/8 -1/4 tsp black pepper to taste
  • 2 tbsp freshly squeezed lemon juice
  • 4-5 tbsp water use as needed to blend

Instructions
 

  • Place minced garlic and ginger and carrots in a processor and process until carrots get chopped quite small. Put beans and all other ingredients and process until you get a dip/spread like consistency.
