This Simple Lentil Soup Is Perfect
Looking for a delicious soup for those days you may be under the weather? Or just want a simple, healthy new recipe? This lentil soup is perfection, full of nutrient-dense, basic ingredients that will warm you through and through. It is a delicious soup for any time of the year, but also perfect for cooler months. Guest Chef Tonia Carrier-Hicks joins us from her kitchen, demonstrating how simple this meal is to make. Let’s take a closer look…
SIMPLICITY IN THE KITCHEN
We love it when Tonia joins us in the kitchen. Her recipes are always so unique and flavorful, but super simple. Tonia is not only talented at veganizing any recipe, but she is also a hairstylist and indie filmmaker from Michigan who has been doing vegan activism since 2018. She is a powerful contributor representing the Midwest on the JaneUnchained News Network. And we love having her! It is fresh and fun and filled with lots of delicious recipes, and other great videos about veganism and the vegan lifestyle. Lentil Soup For The Soul
This lentil soup is full of simple ingredients with a lot of nutrients. It is so easy to make you can have it done in no time. And make some extra for leftovers! Tonia uses lentils, potatoes, carrots, cauliflower, and broccoli, along with a few different spices to add some flair. As Tonia mentions in her video, her and her husband fell ill after her travels back to Michigan, and so this soup came in handy, helping them boost forward towards the road to recovery. It is important to keep your immune system booming by eating a lot of plant-based whole foods, and this soup full of them.
- 3/4 C lentils
- 1.5 C water for lentils
- 3-4 potatoes cubed
- 1 bag of mirapoux or soup based frozen veggies
- 1 bag of carrots, cauliflower, broccoli frozen
- 1-2 Tbsp vegan Better Than Boullion broth paste
- 1/2-1 tsp Mrs. Dash
- 1/2-1 tsp garlic powder
- 1/2-1 tsp onion powder
- 5-6 C water
- Add lentils and water to rice cooker. Let them cook. Cube potatoes and boil in separate pan until fully cooked. Put frozen veggies in microwave until fully thawed. Add bullion, garlic powder, onion powder to water and heat to boiling. Add lentils, strained, cooked potatoes and both bags of veggies to water. If a creamier consistency is desired remove about 3 cups of soup and blend in a blender. Mix blended mix back into soup! Enjoy! SO healthy, EASY and delicious!
