Rainbow Zoodle Salad

Ingredients

  • 3 medium zucchini
  • 1 can organic black beans
  • 1 orange sweet pepper
  • 3 cups purple cabbage
  • ½ cup fresh cilantro
  • 1 cup organic strawberries
  • Annie’s Goddess Dressing
  • salt & pepper

Directions

  1. Wash zucchini and create zucchini noodles aka ‘Zoodles’ using a spiralizer.
  2. Wash and chop strawberries, cilantro, pepper, cabbage and add to Zoodles.
  3. Rinse black beans in cold water over strainer and add to Zoodles.
  4. Add Annie’s Goddess Dressing and salt & pepper to taste.
  5. Enjoy!!
