Rainbow Zoodle Salad
Ingredients
- 3 medium zucchini
- 1 can organic black beans
- 1 orange sweet pepper
- 3 cups purple cabbage
- ½ cup fresh cilantro
- 1 cup organic strawberries
- Annie’s Goddess Dressing
- salt & pepper
Directions
- Wash zucchini and create zucchini noodles aka ‘Zoodles’ using a spiralizer.
- Wash and chop strawberries, cilantro, pepper, cabbage and add to Zoodles.
- Rinse black beans in cold water over strainer and add to Zoodles.
- Add Annie’s Goddess Dressing and salt & pepper to taste.
- Enjoy!!
